Paleo Puttanesca Pizza
One of the challenges of eating Paleo or Primal nutrition is the longing for a good pizza. Its super important to balance your body’s blood sugar and using a crust made from almond or coconut flour. Here is the recipe:
Preheat oven to 400 degrees
1 cup Almond meal or Flour
1 cup Coconut flour
(or 2 cups of either)
6 Free Range Eggs
Italian Seasonings (Basil,
Sea Salt and Pepper
1/2 cup of Olive Oil
Crack the eggs into a bowl, and beat until blended. Add the oil, spices and flours to the egg mix, making sure to break up lumps. Mix thoroughly. It may take some mixing to get the best consistancey (you will want it to be like cookie dough). Add more flour if the mix is too runny. Once set up its time to lay it out.
Using a pizza stone or cookie sheet, line the bottom with parchment paper sprayed with coconut or olive oil spray. Put the crust mix into the middle of the paper and spray the top. Put another piece of parchment paper over it and roll it out with a roller over the paper (this is all in the pan or on the stone).
Keep rolling out evenly. Carefully peel back the parchment paper on the top. Bake for 10-15 minutes until the crust is set up and slightly brown. Remove from the oven. Set aside.
Toppings:
Trader Joe’s Puttenesca Sauce
Trader Joe’s Marinated and Roasted Peppers
Marinated Artichoke hearts
Use either browned and drained Grass fed beef seasoned with Italian seasonings, fennel seeds, cayenne pepper or Italian Sausage removed from casings and browned.
Sauteed sweet onions
Arugala
Anything else your family prefers (pepperoni, mushrooms, olives, cheese, ham, bacon, tomatoes etc)
Layer sauce, meat, veggies, arugala, – just pile it all on!
Cook in 400 degree oven for 10-15 minutes..
Let sit for 5 min and cut. Serve with a tasty Italian salad and prepare to be amazed!
