Green Chili Pork and Cauliflower Stew
Green Chili Crock Pot Pork and Cauliflower Stew
This is one of my favorites! I have made it for parties and served it with some unapproved sides like corn tortillas. By the end of the party, the entire Crock pot was cleaned OUT!
Ingredients:
Boneless Pork Roast (I use a 5lb roast)
1-2 Heads of Cauliflower
Ground Cumin
Salt and Pepper
3 cans of diced green chilis (4 or 7 oz depending on roast size)
1 Jar of prepared Green Chili Salsa
1 Can of Prepared Green Chili Enchilada Sauce
Fresh Avocado slices
1 Yellow sweet onion, sliced and cut in half
1-3 T of Coconut Oil
1tsp Garlic, diced small
1 container of organic, vegetable broth
1 Crock Pot
Prep Instructions
Using a shredder or food processor, grate the cauliflower until it looks like rice. Put into a bowl and set aside.
Cut the ties on the roast (of you can use boneless chops) and cut into chunks.
Season with salt, pepper and cumin on all side.
Melt oil in large frying pan, and brown the pork on all sides.
Remove from pan and put into Crock pot. Fill crock pot with 1/3-1/2 of the height with broth. Add additional cumin, salt and pepper.
Using the same pan, sautee the onions and garlic until brown and soft.
Put on top of the pork in the crock pot.
Open 1 can of chilis and pour it over pork and onions.
Cook for 6-10 hours. The longer it cooks the more tender the meat will be.
Stir the pot occasionally throghout the day. At the 5/7 or 9 hour mark, take the pork out and put onto a cutting board. Take a large fork and start shredding the pork putting each clump of shredded pork back into the crock pot. Make sure if you take all the pork out to shred that you pour the juice into a measuring cup or container.
Once you are done shredding all the pork, you should have onions, pork and some chilis left. Now is the time to add the remaining ingredients- the enchilada sauce, and green chili salsa and the cauliflower. Mix until blended. If there is not enough liquid (its like a thick stew), add some of the juice that you removed. Let it sit in the crock pot for 1 more hour.
Serve into bowls and top with the avocado. Serve a yummy salad full of healthy greens and you have a delicious, balanced, healthy meal!
